No-Bake Rocky Road Brownies

Ingredients:
2 packs Crushed Grahams (Honey)
1 1/2 cup semisweet Hershey's baking chocolate
2 cups milk
100 gms choco chips-nut mix (from Toby's)
100 gms cashews
1 cup miniature marshmallows (or as many as you want)
1/4 block butter

Directions:
Line a pan with plastic wrap or foil. Combine chocolate chips and milk in a heavy saucepan; cook over low heat until chips melt, stirring constantly.

Combine crushed grahams, 1/2 marshmallows, 1/2 nuts and choco chips mix in a big bowl. In low heat, melt butter in a pan, add milk and baking chocolate. Stir constantly until all chocolate is dissolved . Mix chocolate mixture into crumb mixture. Press into lined pan. Sprinkle with remaining nuts and marshmallows. Cover and refrigerate at least 2 hours. Cut into squares.

* you can reduce the amount of chocolates if you don't want it too sweet
* you can reduce the amount of milk if you want it less soft
* you can use other nuts such as almonds, peanuts and walnuts
* you can also garnish it with M&Ms
* i garnish mine with Kellogg's rice crispies
* crushed wafers may also be used

Cordillera Coffee - Baguio

When in Baguio and looking to immerse yourself in local flavor... head to SM (one of its sides) where a Cordillera Coffee can be found (I believe there's also one in Makati).

Nick told us he blogged about Cordillera Coffee already (maybe in his Baguio site) and the poor service they had, which was too bad because their coffee is really great. But that has greatly improved because when we went to their cafe, the staff were all just jumping to serve us.

Food service was prompt and the staff was really accommodating.

Oh My Gulay

Looking for a place to dine in Baguio?

Head to the 5th floor of the La Azotea building along Session Road. Oh My Gulay is a haven of vegetable and pasta fares (the most meat in the menu I saw were ham and bacon garnishes) in an environment made beautiful (and surreal) by local artists.

There is an entrance fee of P20 per person. Shoot to your heart's content, because the place is just filled with artworks. Plus, if you're lucky, you can even meet Kidlat Tahimik himself (and his sons).

There are no elevators though, so the trek up sure is something for those living sedentary lifestyles.

Service is good but the kitchen closes at 9 PM. There's usually a show or impromptu party though. I liked the Oh My Gulay salad and the Chow Mien Noodles (?). Hubs' didn't like his Pasta Meztizo much though.

deceptively delicious

When Mrs. Seinfeld guested at the Oprah Show to promote her recipes that involved pureed vegetables in kiddie favorites, I was sold. I excitedly told my husband about my dreams of doing the same for my son.

But wait. Are the food really as good as they were touted to be? One Mom says they were deceptively disappointing. And some others question the wisdom of deceiving your kids with something so important as the food they eat.

Others are quick to say, however, that this particular trick works best for really younger kids and that the older ones deserve to know. So maybe, before heading out to get a copy of the book, do your own experimentations at home first.

And actually, if you raise your children to love vegetables and fruits as main meals, desserts and snacks, you need not worry about tricking them when they're older.

Junior's Cheesecake and Desserts

Junior's Cheesecake and Desserts are no longer something only New Yorkers can enjoy. Those in Manila can too, because they are now being distributed here.

They're a little on the expensive side, if compared to the usual Red Ribbon and Goldilocks cakes but I hear they're worth every peso. And if you check their website, they're actually a little cheaper or priced the same here (when you include the delivery charge). Saves you a plane trip to partake of sinful delights, right?

addendum:
tried their 8" sampler and the verdict is: the plain cheesecake is to die for! next is the rasperry swirl thing... it's really very rich and very delicious. And though it's expensive, you actually don't need big slices to get the same cheesecake high you're looking for... really highly-recommended!
